Is there a way for a user to cancel or exit a workflow when a prompt is shown?

If a user ignores the prompt, it will reappear for the user when the next session of Corteza is started.

The User may have clicked on the automation “onManual” button by mistake, and simply wants to stop the workflow and not see the prompt again.

You could add a choice prompt at the start of every workflow to have the user confirm if they want to run it.
Else, you can stop it in the admin panel under automation sessions.
